Okay not quite. It took me a couple different trips, staring the sausage up and down before I decided to give it a try. But once I did, I fell hard.
Being pre-cooked, gluten free, and high in protein, it was a triple win in my house.
I’ve served up this chicken sausage a few different ways, but one of my favorites as of recently is this super easy ensemble I call Chipotle Chicken Sausage Tacos.
All you need is a few basic ingredients:
- Pre-cooked chicken sausage (I used Casual Gourmet’s roasted red pepper chicken sausage)
- Corn tortillas
- Butter & olive oil
- Chipotle mayo or sauce of your choosing
- Using a small skillet, add a teaspoon or two of olive oil to the pan and throw in a few sausage links on medium heat. Rotate the links until all sides have been lightly browned. (Sausage is pre-cooked but this step heats it through so it is ready to eat). Remove sausage from skillet.
- Add a few slivers of butter to the pan and throw in your corn tortilla, one at a time. Fry in butter for about 30 secs and then flip and repeat on the other side. Once the tortilla is a nice golden color, remove from pan and top with spinach, chipotle mayo, and sausage.
- Eat and be satisfied.
So easy, so simple, so good.
