We’re on the final countdown to Thanksgiving, folks.
Is that crazy, or is that crazy?
All I know is that I’m glad I’m not hosting the meal this year. The holiday has snuck up on me and I’ve hardly given the big day much thought. Thanks for all your hard work, Mom. I promise I’ll help once I get there.
This recipe has nothing to do with Thanksgiving, but it’s easy and quick and would be a perfect meal when you’ve got a house full of hungry guests lingering around post-Turkey day.
I’ve made this recipe every Sunday for the past month or two. As I’ve mentioned before, Big Fisch is a big eater who takes 3 meals with him to work each day. And no, that doesn’t include breakfast, dinner, or evening snack.
So part of our weekend routine is to cook up five days worth of a chicken + carb meal and a beef + carb meal, on Sunday night. It goes without saying that I’m a big fan of crock-pot meals and anything easy.
Insert: Crock-pot BBQ Chicken Thighs
I use chicken thighs for this recipe because 1) Big Fisch prefers dark meat and 2) chicken thighs are cheaper. But if you’re not a fan of thigh meat (like me,) you could also use chicken breasts for this.
You will need:
Chicken thighs, mustard, hot sauce, Worcestershire sauce, honey, BBQ sauce, salt and pepper.
Now lean in and listen up. You don’t want to miss these detailed instructions…. salt and pepper your chicken and place in crock-pot. Stir together your sauces in a bowl and pour over chicken. Adjust crock-pot settings, put on the lid, and stand back in amazement as it cooks.
It really is that simple.
When mine are done cooking, I separate them out into plastic containers for each day of the work week. I usually pair it with some mashed sweet potatoes and call it a meal.
It’s so easy I could do it in my sleep! Uhh…I probably shouldn’t plant that idea into my mind.

9 chicken thighs (I cut this recipe in half in the pictures)
1/2 tsp salt
1/4 tsp pepper
1 1/2 cup BBQ sauce
1/2 cup honey
2 tsp mustard
2 tsp Worcestershire sauce
1/4 tsp hot sauce
Salt and pepper chicken thighs and place in crock-pot. Stir BBQ sauce, honey, mustard, Worcestershire sauce, and hot sauce together in a bowl and pour over chicken. Cook on low for 4-6 hours or high for 2-3.
