Monster Cookie Dough Cupcakes


A few months ago, a good friend of mine emailed me with a recipe for Monster Cookie Dough Cupcakes which she had found online and “challenged” me to recreate.

Translation: food challenge = bake them for her.

Ain’t that right sister? 😉

Given that her 5 year wedding anniversary was just around the corner, I decided to take her up on the challenge and surprise her with a batch.

And my oh my was that the right decision.

These sweet monsters aren’t exactly what I’d call a looker, but they sure are yummy.

Peanut butter chocolate chip cake with cookie dough icing? What could be more right?

I happened to have most all of the ingredients on hand, and made a few substitutions which worked out just fine.

These cupcakes are perfect for a special birthday treat or any type of party full of guests with a love for sugar.

Give these little evil creatures a try and don’t forget to pile them high with icing!


Monster Cookie Dough Cupcakes

Ingredients (makes 24):

  • 1/3 cup peanut butter
  • 6 Tbsp butter
  • 1 ½ cup flour
  • 1 cup sugar
  • 2 egg whites
  • 3 tsp baking powder
  • 1 tsp salt
  • ½ cup milk, may need a little more if too thick (I used vanilla flavored almond milk)
  • 1 tsp vanilla
  • 1 cup chocolate chips

Ingredients for Cookie Dough Frosting:

  • ¾ cup peanut butter
  • ¾ cup margarine or butter (soften to room temperature)
  • ¾ cup flour
  • ¾ cup brown sugar
  • 2 cups oats
  • 3 – 4  cups powdered sugar, taste after 3 cups and add more as needed
  • 1 cup milk, (I used vanilla flavored almond milk)
  • 1 cup M&Ms
  • ½ cup white chocolate chips
  • ½ cup semi-sweet chocolate chips (or whatever you have)

To bake cupckaes:

Preheat oven to 350°. Melt butter in microwave. Mix in rest of ingredients until batter forms.  Pour batter into lined cupcake pan. Bake for 19 minutes or until tooth pick inserted into middle of cake comes out clean. Let completely cool before icing.

For Cookie Dough Icing:

Use a fork to mix together butter, peanut butter, and 1 cup powdered sugar. Add ½ cup milk. Whisk with the fork until batter is smooth. Add remaining powder sugar (in small increments, mixing after each addition), brown sugar, and flour. Stir in oats, M&Ms, and chocolate chips. Pile ontop of cooled cupcakes and dig in!
