Today I am saying an extra prayer for America and thanking God for the many blessings He has given this country despite the mistakes we have made, and the many difficult times we have encountered.
I don’t think we’ll ever understand why God allows suffering and pain that seems unjust at times, while we are on earth, but one thing I do know is that God is always good and always in control. He is just and He is loving although His ways are sometimes quite confusing to us.
Praise the Lord for the promise of eternal life in a perfect heaven where no pain exists.

Today I want to share with you a quick and easy recipe that is perfect for lunch, AND it is another way to use your homemade Pico de Gallo.
I call it Habanero Lime Chicken Wraps.
I got the idea last weekend when I was shopping at Trader Joe’s and came across Habanero lime wraps in the store that were preservative free!
Habanero? Lime? Add it to the cart baby.
I packed these for lunch at work last week and they held up perfectly in the fridge all morning.
If you’re anything like me, you probably like to add some variety to your lunches. I can’t eat the same thing every single day of the week, week after week (like Big Fisch can).
This is a great, tasty, healthy, and filling alternative to your good old PB&J or smoked turkey on wheat.
Blah. That get’s old.
Spice it up with some fresh Mexican flavor and your taste buds will be dancing like it’s Friday.
You will need tortilla wraps of some kind, rotisserie chicken meat, pico de gallo, lettuce, plain greek yogurt (or sour cream), Monterey Jack cheese, and hot sauce to step up the heat a bit.

If packing this for lunch, I found it worked best to wrap just the chicken and cheese in the tortilla and then bring the sour cream, lettuce, and pico de gallo separately so that I could heat up the chicken/cheese tortilla and then add my toppings right before eating.
